This "low and slow" method ensures your homestead beef stays incredibly juicy while developing a rich, herb-infused crust. Perfect for a family dinner with leftovers for the week.
Ingredients
- 🥩 3-4 lb Beef Roast (Chuck, Rump, or Tri-Tip)
- 🌿 2 Tbsp Fresh Rosemary (minced)
- 🌿 2 Tbsp Fresh Thyme (minced)
- 🧄 4 Cloves Garlic (smashed/minced)
- 🧂 1 Tbsp Coarse Sea Salt
- 🧂 1 tsp Black Pepper
- 🫒 3 Tbsp Olive Oil
Instructions
- Room Temp: Take the roast out of the fridge 30 minutes before cooking to ensure even roasting.
- The Rub: In a small bowl, mix the oil, garlic, and herbs. Rub the mixture over the entire roast, pressing it into the meat.
- Sear: Pre-heat a heavy skillet and sear the meat on all sides until browned (about 2-3 mins per side).
- Roast: Transfer to a roasting pan. Bake at 275°F until the internal temperature hits 135°F for medium-rare.
- Rest: Wrap loosely in foil and let it rest for 20 minutes before slicing. **Do not skip this step!**
